Description

Vert de Montmagny is the dandelion bred for the kitchen: a French market variety with far bigger, more tender leaves than the wild plant. Selected near Paris in the 1850s and now listed in the Slow Food Ark of Taste, this Taraxacum officinale forms a generous rosette of deep green leaves with a well developed white heart. The flavour is pleasantly bitter, in the same family as chicory and endive. Use young leaves raw in salads with a sharp dressing, or wilt older ones with garlic and olive oil. Cover plants for a week before picking to blanch the leaves paler and milder.

Sowing and growing

  • Sow outdoors April to July, in rows or a large container
  • Depth: 0.5 cm
  • Germination: 1 to 3 weeks
  • Thin seedlings to 15 to 20 cm apart
  • Position: full sun or light shade, in deep, well-drained soil
  • Height: about 30 cm; spread 20 cm
  • Harvest: pick leaves from about 10 to 12 weeks; cut plants back and they regrow
  • Lifecycle: hardy perennial; remove flower heads before they seed to keep plants leafy and tidy

Why grow dandelion from seed?

Vert de Montmagny is a cultivated selection with larger, more tender leaves than wild dandelions. Growing your own also means clean leaves from a known spot, picked young when they taste best.

How do I make dandelion leaves less bitter?

Pick young leaves in spring and autumn, when the flavour is gentlest. To blanch, cover the plant with an upturned pot or a board for about a week before harvesting; the leaves turn pale and mild.

Will dandelions spread around my garden?

They only spread by seed, so pick off flower heads before they turn into clocks. Kept leafy, plants stay in one place and crop for several years.
